How I make my SALADs interesting..

The first thing that pops into my head when I think of “salad” is un-filling boring and bland. And life is too short to eat a boring salad that you don’t enjoy.

I spend a lot of time holding my fridge door in search of answers and also because I enter ‘The Doorway Effect’ and completely forget why I opened it in the first place. Please tell me this isn’t just me!! LOL. Well, that is another topic, let's not open that door.

Eating healthy does not have to be sad and boring that would be simply preposterous!! You do not need to angrily chew carrots and choke down kale and lettuce. You do not need to sacrifice flavor and fun. We need to flip the script on this one and tell ourselves this story of what “healthy” food looks like. Food should be a feast for the eyes and stomach.

Imagine having a “boring salad” for lunch in the urge to be healthy? You pull it out of the fridge and it looks all sad and mushy meanwhile your friends are heating mac and cheese and and bringing back delicious-looking sandwiches from the food trucks and you start to seriously resent this stupid, healthy boring salad looking back at you. Well, say no more. Follow my easy step-by-step salad recipe which is super easy and healthy. Also don’t ask me why every picture has a knife in it, RIP food photography :p

FRESHLY CHOPPED KALE
Lettuce, onions and tomatoes.
Mixed beans and also I DON’T know why I clicked this picture with knife on the side.
Wheat pasta, nuts, and corn.
Chicken, spinach, and Jalapeños.
Boom easy-peezy lemon squeezy.

Gather These Ingredients

  • 4 to 5 large kale leaves, chopped very small.
  • 1/4 cup finely sliced onion.
  • 1/2 cup finely chopped spinach.
  • 1/2 Jalapeño.
  • 1/4 cup chopped lettuce.
  • 1/4 cup finely chopped tomatoes.
  • 1/4 cup boiled pasta.
  • 1tbsp of mixed nuts: Almonds, pumpkin seeds and sunflower seeds.
  • 1tbsp beans each: chickpeas, kidney beans, and black beans.
  • 1/2 cup chicken breast well cooked (literally takes 3 mins toss chopped pieces on a pan and spray some oil and very little salt and pepper).
  • Garlic croutons.
  • Fat-free ranch for dressing.

How to Make It

Wash your veggies first, of course, and gather your ingredients. Then:

  • Toss all the ingredients in a huge bowl and mix it all.
  • Don’t forget to add croutons for the extra crunch.

Variations

Want to fancy it up a bit? Consider adding some additional ingredients.

  • Add sautéed zucchini, broccoli, and tofu instead of chicken and make it a completely vegan salad.
  • Add sun-dried tomatoes or cherry tomatoes
  • Add avocado.
  • Squeeze 1/2 lemon.
  • If you don’t like your salad too spicy instead of jalapeños add sautéed green bell peppers or berries.
  • Add fine-grate Parmesan cheesy taste/texture.

There are no rules with this stuff; experiment and have fun. This is a good mix of protein, fiber, carbs, and fat. I hope you enjoy this easy and delicious salad!
